Fluffy eggs and salsa, yummy, with honey wheat toast, sweet butter, homemade peach jam, and chocolate protein shake.

3 fresh eggs
1 oz. sweet Italian creamer
salt and pepper
In a bowl, break eggs, add creamer and salt & pepper. Whip with a fork until blended well. Heat skillet on low heat (on my gas stove that’s a 2). Pour mixture in pan and as it begins to cook, stir lightly with fork until thoroughly cooked but not hard cooked. Set to back of stove while preparing toast.
2 slices Honey Wheat sandwich bread (or your choice)
lots of butter!
Homemade Peach Jam (my favorite – use your fav)
Toast bread to golden brown, slather (love that word) with butter, generously spread on jam.
Place eggs and toast on plate. Move to table. Prepare beverage (I like the chocolate protein shake, you may prefer coffee or tea), and now enjoy!
Simple, nourishing and good for you.
Prep time: 5-6 minutes.
BTW some folks insist on ‘free-range roving” chicken eggs. I don’t (not because I believe in cruelly caging chickens), but have you ever watched what chickens eat when loose to make their own choices? They are gross eaters. Anything and everything. At least in a cage they get pure, prepared grain and water.

JUST SO YOU KNOW
I grew up in farm country, even raised chickens for 10 years while my kids were at home. They didn’t run free, they were in a large coop with an open fenced in area for outdoors time. They were safe from predators and received top food while we kept their coop clean. Warm in winter and cool in summer. Not quite the Taj Mahal, but nice.
Sad note for them – we raised them more for meat than eggs (ooh, I know, cruelty to animals, but they were ‘finger-lickin’ good!).
I might share my wife’s Deviled-egg recipe some time if I get asked. Simple, quick and you can’t eat just one!
Part of my purpose here, is to build your faith and help you have fun doing it. Believe me, the above meal was good and nutritious and I sure had fun eating it. lol
